Ingredients To Prepare Peanut Butter Soup
Gather The Ingredients
- 2 medium onions bulbs, peeled and kept whole
- 2 tbsp tomato paste
- 2 large fresh tomatoes
- 1 pound meat (chicken, beef, fish)
- 6 tablespoons of peanut butter
- 5 small eggplant
- 5 small okra
- 1 (1-inch) piece fresh ginger (grated)
- 2 quarts chicken stock
- Salt to taste
- 2 liters of water
- 1/4 clove garlic, minced or 1/4 teaspoon garlic powder
- 2 teaspoon pepper
Steps To Prepare Peanut Butter Soup
- Place the (chicken, beef, fish) in a large saucepan.
- Place whole, peeled onions, pepper, grated ginger, and tomatoes into the pot.
- Add chicken stock and place over high heat.
- Bring the pot to a boil and reduce to simmer for 10 to 15 minutes until the onions and tomatoes are tender.
- Prepare the peanut sauce whiles the soup is simmering by mixing the peanut butter with water in a small saucepan. These will allow the peanut butter to meld well with the water before adding the rest.
- Remove onions and tomatoes from the pot and blend the soft vegetables. Pour them back into the pot. Bring to a simmer and cook for 20 minutes.
- Cut the stem ends off the eggplants and make a cross-shaped incision in the tops (not too deep as the eggplant should remain whole). Add them to the soup.
- Begin to add water a little at a time to the pot, stirring to prevent lumps or scorching, and simmer for 15 minutes.
- Add peanut sauce to the pot and stir to combine. Peanut oil will begin separating from the sauce and float on the surface.
- Cut off the head and tail of the okra and boil them briefly before adding them to the soup. These serve as a garnish.
- Check for seasoning and add salt and chili powder if desired.
- The dish is now ready for serving alongside omo tuo, plain rice, konkonte, and fufu.
